I wanted to try one, but I was not sure which one looked more appealing.

Hitman. Each location actually has reasons to go back and try new things and encourages experimentation.

It depends on what you are into, but I don't personally think any of these are appealing.

Borderlands 2 - It's as if Red Dead Redemption swallowed Mass Effect and spit out really bad graphics.

Hitman - A game that mostly feels unfinished with weird chapter sections.

Mafia 3 - Repetitive missions and nothing to do other than the missions.

Hitman and Borderlands 2 I've played, and Hitman felt more open to me.  Never understood the hype around Borderlands.
