Most of these are very common. Except applejack. That's a new one on me. I wish there was a way that I could sample just about every cheese at one time to determine which is the best.
There's also Wendsleydale, Red Leicester, Blue Cheese (which is made with Copper wires through it) and I believe a cheese from France that smells of dog shit (smells awful, tastes so good!).
There are more which I know but I forget the types.
Nacho cheese isn't really proper cheese, but manufactured to taste like the stuff.
I do recommend Halloumi cheese though, it's so smooth it even makes squeaking noises when it rubs against your teeth! (It's made in Cyprus) "It has a high melting point and so can easily be fried or grilled. It is noted for its ability to retain its shape under direct heat, or as a "grillable" cheese." It's nicer grilled.
