I thought Iizuka was CEO of Sega?

Lol, no he's not. He's the head / leader of Sonic Team (aka Sonic Creative Officer).
Well, since Sonic is SEGA's biggest franchise, no wonder that he's the one who's always showing up.

Ah, so he is the head of Sonic Team. But given Sonic is Sega's mascot, he is still a big wig, isn't he?

Yes, big wig indeed. A decision maker to Sonic's fate, but not SEGA's fate.
If he said Sonic's color now is red then he'll be red, but he definitely can't change SEGA's logo colour into red or make Kiryu or Ulala wearing red suit (unless if they are in Sonic's game of course).

The Sega logo was once red in 1956-1975

Yes. And Nintendo logo was black with a handwritten font.

Logo changes aren't new thing, but that's not changed by a head of a company franchise.

Sega knew blue was the cooler colour though. Nintendo stuck with red.

Actually the red thing is Nintendo Switch's color.
Since 2016, after announcing Switch, the company has changed the logo to primarily red and white to match the Switch's color.

Before from 2006–2016, a light-gray on white color scheme was used to mach Nintendo Wii's color.

It's the color they used in their logo during their 8-bit and 16-bit glory days so that's why the color's engrained in the memory who grew up during those time.
