If they really wanted to be diverse, then why not mix in more holidays than just make it Christmas centric?

Because SEGA of Japan and SEGA of America aren't always at the same page. Christmas isn't viewed as spesific religion celebration day in Japan, Christmas (and also Valentine & Hinamatsuri) is for everyone.
